I have always been a cheese fan. But I have not always been the cheese man. That's a story that's been ripening for 10 years.

In 2001, I left the Ellijay Police Department to become a stay at home parent. If I'd been told that in two years I'd be living in New York City, attending the French Culinary Institute and working for one of the largest cheese shops in the country, I would have laughed...

A wine with beefy tannins calls for a beefy cheese. Try the cheese formally known as Reblochon, now known as Fleur de Alps. It's a cow's milk cheese from the Savoie region of France. It's a washed rind, but not smelly cheese, with big bold flavors, with hints of beefy-ness. | more...
