The restaurant's blazing-hot oven broils each steak — the New York strip is tops — until the surface is caramelized and crispy with char. Each steak is served in a sizzling cast iron pan, topped with a round of herbed butter and pierced with a whimsical plastic cow pick indicating its temperature.
