TAKA: Chef/owner Takao Moriuchi has a passion for what he does. He sends out a quirky “Taka’s Tuna Club” e-mail newsletter about his weekly fish haul, alongside tidbits on the health benefits of Japanese food. TOMO Japanese Restaurant: Chef Tomohiro Naito has worked under such renowned chefs as Nobu Matsuhisa, whose hamachi sashimi with Serrano pepper slices and yuzu-soy sauce dish appears on TOMO’s menu. Naito procures excellent fish such as the hard-to-find kinmedai, a Golden Eye snapper with a delicate texture, slight sweetness and sexy fattiness.
