Omnivore - Tasty vegetarian find
Find it at Ziba's in Grant Park
This is one of the tastiest things I've eaten in weeks, vegetarian or not. It's a whole eggplant, braised in olive oil, placed atop a grilled portobello mushroom surrounded by a killer red sacue with pine nuts. It's garnished with slightly braised spinach.
It's the work of Chef Landon Thompson at Ziba's in Grant Park.
I ordered the eggplant Sunday night as my entree, after a starter of lamb meat balls. Wayne ordered the restaurant's hummus and babaganoush for a starter, followed by chicken spanakopita — all delicious. Don't miss the tres leches cake with pineapple.
