For three weeks in August and September, Chuy’s Perimeter will host a “Pepper Heaven†themed Green Chile Festival to celebrate one of the nation’s most prized peppers. Each day during the three-week festival, Chuy’s chefs will hand-roast Hatch, New Mexico green chilies for several featured dishes including Green Chile Barbecue Tacos, Frito Pie Enchiladas and Green Chile Fajita Beef Flautas.
