Omnivore - Chefs from Portland’s Ox are Gunshow’s next hired guns

Gunshow has targeted Greg Denton and Gabrielle Quiñónez Denton chefs and co-owners of the renowned Portland, Ore., restaurant Ox as the next “hired guns.” Lucky guests can expect a culinary tour of the Pacific Northwest interpreted with inventive fare inspired by the wood-fired grilling tradition of Argentina and the culinary heritage of Spain, France, and Italy.

This round of guest chefs is slated for Tues., May 26 and Wed., May 27 with only a limited number of reservations available.

The Hired Guns series feature guest chefs from around the country and provides each with a stage via Gunshow’s open kitchen to present their signature flavors by creating dishes alongside the restaurant’s regularly featured menu items. Ox, which opened in 2012 is regularly on Portland “must visit” lists. The Dentons were named to Food & Wine’s list of the Best New Chefs for 2014 and were finalists for the James Beard Foundation’s 2015 Best Chef Northwest. Chef Gillespie said of the two-day collaboration:


“I’ve been a fan of Greg and Gabrielle for years, and I’m looking forward to seeing what they bring to Gunshow.”

If you haven’t experienced the fun yet, Glenwood Park’s Gunshow takes a dim sum approach to dining; chefs present medium-sized dishes of their own making tableside, describe the components, and diners choose whether to try or wait for the next arrival, instead. The addition of hosting lauded chefs from other cities doubles the fun.

Future Hired Guns events include JJ Johnson of Harlem’s the Cecil, Aug. 11-12; Jean-Paul Bourgeois of New York City’s Blue Smoke, Sept. 29-30; and Colby and Megan Garrelts of Rye in Kansas City, Nov. 17-18.
