The steakhouse genre too often comes in the form of overly stuffy bastions of masculine excess. THE FEDERAL does no such thing. It’s tempting to call Shaun Doty and Lance Gummere’s new Midtown spot a simple bistro, but the steak offerings at the heart of the menu stretch the definition. From hand-cut Iowa filets ordered by the ounce to massive yet attractively priced porterhouses, the Federal tempts with well-sourced cuts cooked simply in cast iron. Plus, there’s the option of expertly prepared sauces like au poivre, béarnaise and chasseur on the side. A three-course steak frites prix fixe for $30 offers the best bargain on the menu, available from 5-7 p.m. at the bar, Monday through Fridays only. 1050 Crescent Ave. N.E. 404-343-3857. www.thefederalatl.com.

When chef Laurent Tourondel’s Atlanta outpost of his successful New York restaurant opened, people were skeptical that any Frenchman could make a steak better than our local institutions. But BLT STEAK (short for Bistro Laurent Tourondel) does beef proud. The restaurant’s blazing-hot oven broils each steak — the New York strip is tops — until the surface is caramelized and crispy with char. Each steak is served in a sizzling cast iron pan, topped with a round of herbed butter and pierced with a whimsical plastic cow pick indicating its temperature. The long list of sides changes daily, but the gooey perfection of the potato gratin must be ordered when available. Chef Tourondel’s signature complimentary Gruyere popovers arrive piping hot from the oven alongside soft butter and an oversized metal salt shaker. 45 Ivan Allen Jr. Blvd. (inside the W Atlanta downtown). 404-577-7601. www.bltrestaurants.com.

When it comes to steaks, sexy and sleek contemporary digs are all well and good, but there’s something to be said about old-school steakhouses that have the marks of a boys’ club. BONE’S RESTAURANT is that place: loads of wood, men downing a scotch at the bar after a long day of work, seasoned servers in dapper jackets – but the steaks here are the real draw. The experienced kitchen churns out thick cuts of prime beef that are expertly cooked and always juicy thanks to a proper resting period. Notable steaks, such as the bone-in dry-aged New York strip, are extremely flavorful and even better with a glass of wine from the stellar list.

There surely are swanker steakhouses in town, but what does that matter when the steak on your plate at BONES tastes like butter? No other steak in town comes close to the delicious flavor, the perfect char and the impeccable cook on these babies. We love the well-worn, good-old-boy, clubby digs, and waiters who seem to be channeling Joe Pesci. This place will put you in the mood for scotch and cigars even if you’re not that type of girl.
