The James Beard Award winning chef has always been a lord of meat - just look at the hanging shrine of cured meats at the entrance to Holeman & Finch. So, we were floored when we heard from AJC columnist Jon Watson that chef Linton Hopkins of Restaurant Eugene and Holeman & Finch Public House has gone vegan.

When I initially reached out to Hopkins for comment, he let me know he has been vegan for 8 weeks and is "loving it." We have a call out to Hopkins for further comment about his new lifestyle, the reasoning behind it, and how it is affecting his cooking.

In the meantime, I'm curious about how, if at all, his vegan diet is this affecting food at either of his restaurants. I, for one, am excited to see where this takes Hopkins as a chef.
