Service @ Seven is a single-seating, communal blind tasting dinner series hosted by Chef Kyle Taylor (HE COOKS®).
Volume 06, titled "High Tide," explores the intersection where the ocean seasons the earth. The 6-course menu maps the distance between icy, cold-water coastlines and warm-water flats, anchoring tidal yields directly into the land. Highlights of the progression include Cured Honeydew with tomato dashi and kelp sea foam, Blackened Tuna with a fermented curry agrodolce, and Kombu-Glazed Pork Belly over sushi-spiced orzo.
