Made with a combination of quinoa, lentils, mushrooms, bulgur wheat and sun-dried tomatoes, it’s at once rich, hearty, nutty, savory and intensely satisfying. The tangy romesco sauce and roasted cauliflower, shiitake and sun-dried tomato salad provide more intense earthy flavor than is present in many of the city’s best meat dishes.
