Omnivore - Speaking of mole ...

Lucero Martinez Obregon is now heading Pompano New York

Seeing Besha’s and Jennifer’s posts on the mole at Zocalo reminds me of some news about Lucero Martinez Obregon, one of the three siblings who started Zocalo 15 years ago.

Lucero has been promoted to chef ‘d cuisine at Pompano New York,  the restaurant where Richard Sandoval (in partnership with Placido Domingo) introduced New Yorkers to his famously “modern” take on Mexican coastal cooking. Lucero went to work for Sandoval, probably the best known Mexican chef in the country, last December.

By the way, about the mole at Zocalo: When the restaurant opened 15 years ago, Lucero and her two brothers actually hauled it from their parents’ farm in Mexico, not terribly far from the area where I spent most of a year long ago.  As I recall, their mother made a white mole as well as the red they are now making here. Or maybe they made it themselves. In any case, I still crave it.
