We offer several Butchering Classes through the year & we've just posted our Fall 2014 Schedule:Whole Hog Class w/ Gum Creek Farms: learn how to breakdown a whole pig and cut Chops & cure Bacon.Sausage Making Class: make 2 pounds of your own, signature sausage!Cured Meat Class: Learn the art of curing & make Salami & Pancetta.Butcher Boot Camp: Three Saturdays of sawing, grinding, chopping, & curing as you work side-by-side with local chefs, butchers, & farmers!We keep our classes small, 10 to 15 students, and very hands on.
