? In last Thursday's Ponce City Market Preview cover story, we outlined an array of forthcoming restaurants and food stalls planned for PCM’s highly anticipated Central Food Hall. We also checked in with a few of the Hall's high-profile cheftenants to learn more about their forthcoming eateries. In addition to the 17 food and drink businesses that were highlighted, we've added three more PCM tenants to the list of places we can't wait to check out. First up, 18.21 Bitters, which is gearing up to open in less than two weeks, followed by a new restaurant from the owners of the Pinewood in Decatur called the Mercury and famed NYC chef Jonathan Waxman's new, yet-to-be-named restaurant, both projected to open late 2015: ?

? The first-ever retail shop for Atlanta-based bitters-and-cocktail-mixer company 18.21 Bitters is slated to debut Tues., Sept. 1. Founded in early 2014 by owners Missy and Kristin Koefod, 18.21 is known for its line of unique bitters, tinctures, shrubs, syrups, tonic, ginger beer, and bottled craft sodas. All of 18.21's products will be available to sample on-site and there will be "custom flavors that you will only be able to find at our retail location," said Missy Koefod in an email. "You will find a selection of barware, cocktail books, tons of vintage bar and glassware, and we offer cocktail classes and private events as well as cocktail consulting." Later this fall, the Pinewood's Brooks Cloud, Julian Goglia, and chef Mike Blydenstein plan to open their hip new PCM restaurant, the Mercury. Inspired by 1960s food and culture, says the press release, "the cocktail-focused, classic American eatery" will offer modern riffs on mid-century American classics. Serving lunch and dinner seven days a week, the menu will include "an extensive raw bar, steaks and chops, and balanced, straightforward entrees featuring seasonal produce and responsibly-sourced protein." On the cocktail front, top mixologist and Beverage Director Julian Goglia will "curate a full service bar program rooted in approachability and familiarity updated with modern technique, house made ingredients and premium spirits." Goglia hopes to craft bar experience that channels the "relaxed glamour of Mid-Century cocktail culture." According to the release, "the Mercury will occupy a space on the second floor of The Central Food Hall at Ponce City Market. Atlanta’s Square Feet studios is currently designing the 4,400 foot restaurant. The Mercury will seat 200, with 95 seats in the bar and lounge, 64 seats in the main dining room and 41 on an indoor patio and drink rail overlooking the first floor promenade of Ponce City Market." ? Famed chef Jonathan Waxman recently confirmed his plans to open a PCM concept similar to his celebrated NYC restaurant Barbuto. According to PCM, the yet-to-be-named full-service eatery will feature "Italian and new American influences in a simple, yet creative manner." Details as they arise. ?
