Nonprofit Development in Gardening challenges local chefs to dig deep on the issue of food waste

DRINK UP: Cocktails and Castoffs focuses on creating a zero-waste dining experience.

It's not hard to imagine how much food Americans waste on a day-to-day basis. But in some areas of the world, people are struggling to find enough food just to live. Development in Gardening (DIG) is a nonprofit focused on bringing that issue to the forefront, funded in part by its annual Cocktails and Castoffs dinner. DIG's event will feature eight Atlanta chefs and mixologists, including Cibo e Beve's Linda Harrell, Better Half's Zach Meloy, Tiffanie Barriere, Watershed's Zeb Stevenson and more, cooking up innovative little-to-no-waste dishes and drinks centered around food scraps that typically go in the trash. Some of the work DIG does in Sub-Saharan African countries will also be presented at the event, offering attendees a chance to see both the global and local connections between climate change and food waste. All proceeds from the evening will go toward funding DIG's work helping nutritionally at-risk populations in Africa develop sustainable gardening practices and cooking techniques.
