About this event

Oyster South is a 501(c)(3) non-profit founded in 2016 by members of the scientific, restaurant, farming, and food-writing communities for the purpose of spotlighting southern oyster aquaculture. Our mission is to connect communities and provide resources to foster the success of oyster farming in the Southern United States. Oyster South’s vision is to spotlight and expand the environmental and economic benefits of oyster farming in the South, which will increase sustainable seafood production, improve the health of our waters, increase the prosperity of our coastal communities and elevate appreciation for Southern farm-raised oysters.
The first beneficiary of LL6 is a collection of wonderful humans operating under the moniker Shell to Shore. Here is their mission statement in their own words:
“Shell to Shore is an oyster shell recycling project based in Athens, Georgia. Oysters are a natural resource, a keystone species, and ecosystem engineers, filtering water and regenerating themselves. By transporting shell from your table to the shore, we are diverting shells from the landfill and reconnecting this natural resource to its coastal home, where wild oyster spat connects to the recycled shell and replenishes wild oyster reefs. Oyster shell restoration projects, known as living shorelines, can also help prevent erosion, storm surge, and flooding, and provide critical habitat for #saltlife.”
The second beneficiary will be Oyster South’s Peer to Pier Program. This supports peer-to-peer learning opportunities for oyster farmers, chefs, and others in associated industries in the southern U.S. to attend industry conferences & shows as well as visiting peers in other parts of the country to pursue learning opportunities. P2P will continue to strengthen the network between Southern farms and other farms around the country. It will also encourage farmers and our chef members to gain firsthand oyster farm knowledge they can take back to their own farms and restaurants.
